Savory Apple Pockets

Here I am having way too much fun with apples and Katie Quinn in this new episode for Fresh Up Your Life! I was so excited to finally meet Katie in person, and cook this recipe simple and delicious appetizer together. DO try this at home!

Savory Apple and Gorgonzola Pockets

  • 3 apples, peeled and chopped into small cubes
  • 2 tbsp brown sugar
  • Juice from 1 orange
  • 3 tbsp chopped hazelnuts
  • 3 rolls puff pastry
  • 3,5 oz gorgonzola cheese, crumbled
  • 1 egg, lightly beaten

Preheat oven to 450°F (220° C).

Combine apple pieces, sugar and orange juice in a pan. Cook for ten minutes over medium heat, then add chopped hazelnuts and remove from heat.

Roll out the puff pastry and cut into 6 squares (about 4-5 inches per side). Then spoon a bit of apple mixture and some crumbled cheese onto the center of each square, dividing evenly. Fold the 4 corners of each bundle towards the center, then brush them with beaten egg and press corners together to close.

Place the pockets onto a parchment-lined baking sheet and bake in preheated oven for about 12 minutes. Serve hot.
