I’m excited to kick off a new series of video recipes for Fresh Up Your Life, a project funded by the European Union and by CSO Italy, which brings together the main Italian producers of fresh fruit and vegetables. I’ll be publishing a series of video recipes on my Instagram channel over the next couple months, starring Italian-grown fruits and vegetables. My first recipe is for these Red Wine Poached Pears, which I prepared with Vatinee: check out the video here!
Red Wine Poached Pears
- 1 cup sugar
- 1 bottle red wine
- 1 cinnamon stick
- 6 pears
- Ice cream, for serving
Peel the pears but be careful not to detach the stem. In a saucepan, combine wine, cinnamon stick and sugar, bring to a simmer and then add the pears. Cook for 30 minutes, keeping liquid at a slow simmer. Remove from heat and let pears cool in their cooking liquid. Drain, discard liquid, and serve pears with vanilla ice cream.
