Just so you know: if you send a “mystery box” of tex-me ingredients to a Texan, she will most likely make tacos. Don’t expect fancy fusion creations or frilly plating. Do expect tacos: tasty, messy and many. So when Santa Maria sent me a selection of their products and challenged me to create a recipe, my mind went straight to tacos. These are colorful and fun with juicy pulled pork, crunchy red cabbage slaw and caramelized apples. What do you think? Did I live up to the challenge, and to my Texan roots?
Pulled Pork Tacos with Caramelized Apple
- 1 cup shredded red cabbage
- 2 teaspoons lime juice
- Salt
- 2 green apples, peeled and cubed
- 1/2 teaspoon tex-mex seasoning (like Santa Maria‘s Fajita mix)
- 1 teaspoon cane sugar
- 1 tablespoon butter
- 4 tortillas (I used Santa Maria)
- 1 cup pulled pork (recipe here)
- Sliced, pickled jalapeños (I used Santa Maria)
- Hot sauce
- Fresh cilantro leaves
Makes 4 tacos
Combine the shredded cabbage, lime juice and a pinch of salt in a small bowl. Mix well and set aside.
In a separate bowl, stir together apple cubes, spice mix and cane sugar. Melt the butter in a nonstick frying pan; add the apple pieces when the butter is foaming. Cook, stirring rarely, until the apples are golden brown and caramelized, about 7 minutes.
Heat the tortillas and stuff each one with pulled pork, caramelized apple, marinated cabbage, jalapeños, hot sauce and cilantro. Serve warm.
