Here is another quick and easy recipe that I created for my collaboration with the Almond Board of California. We have some hectic days and weeks ahead of us before the winter holidays, so it’s important to stay energized with healthy snacks, like these irresistible almond and date bites!
Almond-date Energy bites
- 2 cups almonds
- 10 oz pitted medjool dates
- 2 tablespoon cocoa powder
- 2 tablespoons cold water
For 16 energy bites
Blend almonds in a food processor until finely ground.
Add dates, cocoa powder and water and continue to pulse until mixture comes together. Form about 16 small golf-ball size energy balls with damp hands. (If mixture is too crumbly to form balls you may add a little more water, 1 teaspoon at a time.) Refrigerate balls for at least 1 hour before serving.
