Vegetarian Club Sandwich

If this blog and my books have done their job, you should all know by now that America has more to offer than junk food. I have worked hard over the years to offer recipes both for the stereotypical and caloric American fare as well as the lesser-known, more wholesome foods my country has to offer. In that spirit, today I’m presenting you with an updated, vegetarian version of the classic American club sandwich. This is a delicious and beautiful sandwich, a treat for the eyes as well as the palate. I was lucky enough to come across mixed sprouts in a rainbow of colors, but if these are hard to find in your area, you could easily substitute them with colorful grated vegetables, like zucchini and beets. Club Sandwich Vegetariano

  • 3 slices of whole-wheat sandwich bread
  • a few slices of smoked scamorza or other smokey cheese
  • half of one ripe avocado
  • 1 carrot, grated
  • mixed sprouts (alfalfa, soy, beet etc)
  • mayonnaise, mustard or other sauces
  • salt and pepper to taste
  • 4 decorative toothpicks
For 1 sandwich

Arrange the bread on a cookie sheet and place the sliced cheese on only one of the slices. Toast the bread in a hot oven until the bread is golden and the cheese is melted.

Peel the avocado and mash the pulp with a fork. Line up the three slices of bread on a cutting board, with the cheese-covered slice in the middle. Spread the mashed avocado on the first slice of bread, then top with grated carrots, a few slices of tomato, salt and pepper. On the second slice of bread (on top of the melted cheese) arrange the sprouts and a few more slices of tomato if desired. Carefully set the second slice of bread (cheese-side up) on top of the first slice of bread. Spread the third slice of bread with mayonnaise and mustard and use this to close the sandwich (mayonnaise-side down, of course). Stick the toothpicks through the sandwich to hold it together and cut into triangles. Serve immediately.
