Pomegranate, orange and carrot juice

If you follow me on Instagram, you’ll know that I’ve been making a lot of cookies lately. I’ve made this insane promise to post a cookie a day for all of December, and I fear my waistline is suffering already… and I still have 20 days to go! Fortunately, I also have this little machine called SuccoVivo, that helps keep me healthy and happy during these difficult days filled with butter and sugar. This juice recipe is one of my favorite during the winter, it is filled with vitamins and antioxidants and always brightens up my day.

If you want to know what to do with the leftover juicer pulp, check out my Waste-not Muffins, or go visit Lisa Casali’s blog, where she posts a lot of great pulp recipes. I participated in an interesting Imetec event hosted by Lisa and Marco Bianchi a few weeks ago. Marco taught us several great juice combinations, and Lisa transformed the pulp into a a delicious dinner menu. You can check out the video from the evening below.

SO, I challenge you all as well, to create a recipe that represents both health and sustainability in the kitchen. With Imetec’s contest “Vivi il succo” you could win a cooking class with Marco Bianchi and Lisa Casali, and one juicer a week. Click here for details.
