Well, I’m back from three weeks in Texas that felt like one long day. I’m having a hard time remembering what I even DID all that time, it all feels like a lazy fog. But I know I did things; unambitious, non-activity sorts of things… like soaking up the Texas air like it was a hot bath. I drank cold beer on my back porch, I swam in deep blue swimming pools, I ate BBQ and mexican food at every occasion, I saw three baby raccoons on a morning walk through the ranch, I dipped my feet in the stream of my ancestors and pic-nicked overlooking mirrored surface of a pond. It was perfect.
While I’m here I wanted to remind everyone of my favorite cold summertime soup, in case you missed the post from three years ago. This cucumber, avocado and mint soup is as cool and refreshing as it is quick and easy to prepare. It’s a no-brainer and a sure-fire winner!
