Mini Apple Cakes

I’m in a dizzying rush of parties, relatives and holiday baking, but I wanted to post a quick and fantastic apple cake recipe that makes for a great gift (thanks Jill!). Enjoy!

Cake Ingredients:

  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups sugar
  • 1 cup oil
  • 3 large eggs
  • 1 tsp vanilla
  • 1 cup pecans, chopped (may substitute with walnuts)
  • 3 cups peeled and chopped granny smith apples

Glaze Ingredients (optional):

  • 1 cup brown sugar
  • 1/3 cup butter
  • 1/3 cup milk

Preheat oven to 350. Grease a 9-10 inch tube or bunt pan, or several individual loaf pans. Sift together flour, soda and salt. Set aside. Beat together the sugar, oil, eggs and vanilla until pale and smooth. Beat in the flour mixture. Add the apples and nuts and mix until distributed. The batter will be very thick. Bake for 80-90 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes (make the glaze during this time) and then run a slim knife around edge of pan and remove outer ring. If you want to include the glaze, combine all glaze ingredients in a small saucepan over a low flame, bring to a boil and simmer for 10 minutes. Poke cake all over the top with a skewer and brush glaze over cake. Let it drip over sides and as the glaze is absorbed, brush on more until all the glaze is used.
