Uova in Purgatorio

Eggs in Purgatory

  • Extra virgin olive oil
  • 1/2 clove of garlic, minced
  • 1/2 onion, minced or thinly sliced
  • 1 1/2 cups tomato sauce
  • 4 eggs
  • 1 splash white wine
  • Salt & pepper to taste
  • Chopped basil or parsley, for garnish

Heat a tablespoon of oil in a frying pan over medium heat; add garlic and onion. Cook, stirring often, for several minutes until the onions begin to turn golden. Add the tomato sauce, bring to a boil, and then lower heat to a simmer for 5 minutes. Make 4 indentions in the sauce with a wooden spoon and gently crack the eggs into them, being careful not to break the yolks. Cover and cook, undisturbed, for 5 minutes, until the whites are opaque. Salt and pepper as desired and garnish with parsley or basil. Serve hot with toasted bread, if desired.
